I woke up today and was looking for something to make my kids for breakfast. We make pancakes a lot on the weekend, but I asked them if they were in the mood for waffles. Waffles?? How do you make those?? I then reached way back into the depths of a cupboard and pulled out my waffle iron. They all said “I didn’t know we had a waffle maker?” I do. It’s one of those things you think you’re going to use and you may use it once and then it goes in the same cupboard as all the other gadgets that take up space on the counter. I have a sandwich maker, a handy chopper from Pampered Chef, a smoothie maker, I even bought off an infomercial a deep dish pizza maker! (I think I only used that to cook a frozen pizza!) So, they were pretty excited that I had such a deluxe gadget! I didn’t have a recipe for waffles, so of course, I googled it and the first thing that came up was one of my favorite sites www.eatbetteramerica.com . They had many varieties and I chose one that I had most of the ingredients for, but I did have to make a few changes.The recipe called for quick oats, but I only had steel cut oats which normally you are supposed to cook for 30 minutes. Instead, I still used the steel cut oats, but I ground it up in my magic bullet until it resembled flour. The only thing I don’t know is if you still get the same nutritional value since it isn’t cooked. But, even using that substitute they still turned out fantastic!
- 3/4 cup all purpose flour
- 1/2 cup whole wheat flour
- 1/2 cup quick cooking oats (I used steel cut)
- 3 tsp. baking powder
- 1 TB sugar
- 2 TB. canola oil
- 1 egg
- *optional 1/4 cup chocolate chips, diced
Add everything in a bowl and stir until everything is incorporated. I used a half up measure to pour it on the waffle iron. Cook for about 3-4 minutes. It makes 6 waffles and each serving is 2 waffles. 230 calories, 6 fat and 3 fiber. You could also of course, add blueberries, mashed banana, or I would have added ground flax seed, but I am out!
