Chicken Bean and Cheese Burrito

This was air fried to crispy - with an amazing dip!

Ingredients
  

  • 1 large flour burrito
  • 1/2 cup fat free refried beans
  • 1/4 cup yellow and green bell pepper chopped
  • 1/8 cup shredded Mexican Cheese blend
  • 3 oz. cooked chicken breast diced
  • 1/2 cup fat free plain yogurt (for the dip)
  • 1/4 cup green salsa
  • yellow and green bell pepper strips (for the side)
  • hatch chilies (for the side)

Instructions
 

  • Heat the flour in the microwave for 20 seconds to soften.
  • Add 1/2 cup of the fat free refried beans over the tortilla
  • Add the chopped cooked chicken, peppers, cheese.
  • Fold the burrito and place seam side down in an air fryer. Spray with cooking spray.
  • Cook burrito on 400 for 8-10 minutes until golden brown.

Notes

The star of this dish was the yogurt/salsa sauce!  If you like sour cream, this is a great way to get a lot for not a lot of points! 
Mix 1/2 a cup of Siggi's brand fat free plain yogurt with 1/4 green salsa.  Season with salt and pepper.  
The yogurt/salsa dip for my burrito and the vegetables was amazing!
This is the first time I had hatch chiles!  They come in a bag in the grocery store.  To make - add to an air fryer and cook for 3-4 minutes.  The bag said that 1 in 10 are spicy - half of the ones I had were spicy!  But I loved it. 
This whole plate was 10 personal points on my Weight Watcher plan.
