Jenn Cooks Air Fried Spaghetti Squash Boats

Super easy way to prepare spaghetti squash!

Ingredients
  

  • 1/2 spaghetti squash seeds removed
  • 2 cloves garlic chopped
  • 2 tablespoons white onion chopped
  • 1/2 cup pizza sauce I use Classico Fire Roasted Brand
  • 1 cup Morning Star Farms ground "beef" crumbles *Vegetarian beef - found in the freezer section of your store
  • 1/8 cup shredded cheese blend

Instructions
 

  • Cut a small spaghetti squash in half, scoop the seeds out. Season with salt, pepper, Italian seasoning and crushed red pepper flakes
  • Cook in an air fryer at 400 degrees for 20 minutes.
  • While the squash is cooking, in a small pot, add the onion and garlic with a little cooking spray and saute for several minutes.
  • Add the "beef" crumbles and saute for a few more minutes.
  • Add the pizza sauce and simmer until the spaghetti squash is cooked.
  • Remove spaghetti squash from the air fryer, using a fork, shred the flesh - it will look like spaghetti!
  • Add the sauce on top, add the cheese and enjoy!

Notes

For my Weight Watcher Friends this meal was 5 personal points plus I added a point for vegetables.  
This was so hearty and delicious!  I'll definitely make this again.
