In a medium pot, add the olive oil. Add the potato, and other vegetables and cook for 5 minutes, stirring occassionally.
Add the spices and stir. Cook for 2 more minutes.
Add the Kettle and Fire Bone Broth, the salsa, and tomato sauce.
Add the morningstar beef crumbles.
Simmer on low for 20 minutes.

This makes 3 generous servings (each serving is 2 cups).On my Weight Watcher plan, it's 2 points for 2 cups (I get 1 point back for vegetables).This is so great and filling! Other great additions would be black beans, refried beans, garbanzo beans, lentils, avocado and cheese for toppings.
