Jenn Cooks Taco Soup

Super easy soup - ready in under 30 minutes

Ingredients
  

  • 5 baby new potatoes cut into cubes
  • 2 carrots chopped
  • 4 celery stalks chopped
  • `1/2 small white onion chopped
  • 8 shishito peppers diced (optional)
  • 1 cup Morningstar Brand Vegetarian Beef Crumbles
  • 1/2 cup jarred salsa
  • 8 oz can tomato sauce
  • 1 container Kettle & Fire Beef Bone Broth (2 cups)
  • 2 tsp. chili powder
  • 1 tsp. cumin
  • 1/2 tsp black pepper
  • 1 tsp. olive oil

Instructions
 

  • In a medium pot, add the olive oil. Add the potato, and other vegetables and cook for 5 minutes, stirring occassionally.
  • Add the spices and stir. Cook for 2 more minutes.
  • Add the Kettle and Fire Bone Broth, the salsa, and tomato sauce.
  • Add the morningstar beef crumbles.
  • Simmer on low for 20 minutes.

Notes

This makes 3 generous servings (each serving is 2 cups).
On my Weight Watcher plan, it's 2 points for 2 cups (I get 1 point back for vegetables).
This is so great and filling! 
Other great additions would be black beans, refried beans, garbanzo beans, lentils, avocado and cheese for toppings.
